This is a sun-soaked summer salad that’s equal parts refreshing and romantic! Juicy watermelon, creamy feta, and fresh herbs come together in a simple yet stunning dish—perfect for golden hour picnics, garden lunches, or dreamy dinners by the sea. Light, bright, and effortlessly beautiful.
Ingredients
Fresh watermelon, cubed
Crumbled feta cheese
A handful of fresh mint leaves
A handful of fresh basil leaves
Thinly sliced red onion
Red wine vinegar (or balsamic vinegar)
Optional: balsamic glaze, sea salt
Instructions
Chop & Prep: Cube the watermelon into bite-sized pieces. Thinly slice the red onion. Finely chop the mint and basil, reserving a few basil leaves for garnish.
Mix the Dressing: In a small bowl, combine red wine vinegar (or balsamic) with the chopped herbs. Add a pinch of sea salt if desired.
Assemble: In a large bowl, gently toss together the watermelon, onion, and dressing. Add the crumbled feta and toss again lightly.
Finish: Garnish with whole basil leaves and, if you like, a drizzle of balsamic glaze for a sweet, tangy finish.
